How to cry less (and dice more onions!)


There are so many tips out there to make cutting onions a less painful experience, from pre-chilling your onion, to cutting while breathing through your mouth or cutting near running water or steam. My personal favorite is a sharp knife! A sharp knife makes cutting onions easier, cleaner, and less likely to irritate your eyes.

Why a Sharp Knife Helps:

A sharp knife cuts cleanly through onion layers without crushing them, creating even slices and helping preserve the onion’s texture. Dull knives require more pressure and can mash the onion, while a sharp blade releases fewer juices and reduces the compounds that cause tearing. Because sharp knives need less force, they also make chopping smoother, more controlled, and safer.

Recommended Knife Options:

·       Chef’s Knife: A versatile choice for chopping, slicing, and dicing onions. Its curved blade supports efficient rocking motion.

·       Santoku Knife: A shorter, lighter option with a granton edge that helps prevent sticking and gives good control for fine dicing.

·       Nakiri Knife: A flat-edged Japanese knife suited to push cuts, producing clean slices through onion layers.

·       Paring Knife: Useful for peeling and detailed cuts, but less suitable for chopping large onions.

High-carbon stainless steel blades with a 12–15 degree edge angle are well suited for onions because they keep a fine edge and slice cleanly without crushing the layers.

Technique and Safety Tips:

Good grip and hand placement are key. Hold the knife securely with your dominant hand and use a claw grip with your other hand to steady the onion and protect your fingers. Cut with smooth, controlled motions instead of forcing the blade. To prevent slipping, use a stable cutting board, ideally with grips, or a damp cloth underneath.
